Sweet and Sour Pork


Ingredients: (serves 2)
300g diced pork chopped and marinated in rice wine and a few ground sichuan peppercorns
1 egg
Flour, for coating the pork
3-4 spring onions chopped, green and white part separated
1 red pepper, chopped
1 green pepper, chopped
1 carrot, thinly sliced
100 ml chicken stock
2-3 cloves garlic, crushed or chopped
5cm piece ginger, thinly sliced
1-2 tblsp rice or cider vinegar
1 heaped tblsp brown sugar
1 tblsp tomato ketchup
2 dried red chillies, chopped
1/2 Tblsp soy sauce
1 Tblsp rice wine
1 slice of pineapple, chopped (optional)
1 tsp cornflour

Baileys, Oreo and Chocolate Cheesecake


This is a no bake cheesecake with a base made from crushed oreo cookies, a mascarpone filling flavoured with Bailey’s irish cream and chocolate pieces, then decorated with more chocolate and cocoa powder. This recipe doesn’t use gelatin so the filling will be fairly soft – its best if you can put it in the freezer for 30 minutes before serving.

500g Mascarpone cheese
150g pack Oreo biscuits
100g dark chocolate
100g butter
100g icing sugar
50 ml Baileys (or supermarket own brand)
Cocoa powder, for dusting
